Tonight we had one of my childhood favorites: beef and barley stew. It is perfect for a cool autumn evening. It’s thick, hearty, and very yummy. Kaity wasn’t sure she’d like it; but she LOVED it, and went back for seconds.

This isn’t anything like the store-bought beef and barley soup, which is thin and watery. This is way better, and best of all, makes plenty for leftovers – which Kaity tried to convince Brandon he didn’t really want, and so should leave for her.

You mean the gravy with ground beef and potatoes? No.
It was more of a vegetable stew type medley…..really thick….served on top of mashed potatoes…..
I remember the mashed potatoes part. My recollection of the stuff that went on top of the mashed potatoes was that it had ground beef, green beans, carrots (maybe?), and a gravy of some sort. But I don’t remember it well. Just a vague notion. But camp stew, now — I *remember* camp stew [commonly called hobo stew or hobo pie]. Yummy.
