Artichoke Dipping Sauce

As a kid, Brandon had eaten the occasional artichoke, and one of his options was mayonnaise dipping sauce (usually just plain mayo with a little lemon juice). I had rarely eaten artichokes, never as a kid that I can recall, but I like them. I had only ever heard of dipping them in lemon butter sauce, but mayonnaise is good, so I was willing to give it a try. I pulled a few spices out of the rack and added them to the sauce, and artichokes are one of our favorite vegetables now.

Note: I make these in individual portions, that way spices can be to adjusted to suit everyone’s taste. Also, celery salt is the key ingredient. It makes the sauce wonderfully fresh tasting.

Artichoke Dipping Sauce

Ingredients

  • 3 Tablespoons of mayonnaise
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon seasoning salt
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon dillweed (Kris)

Instructions

Squeeze mayonnaise into small bowls (ramikins work well for this). Sprinkle spices over mayo, and mix with a fork. Serve with piping hot artichokes.
