Fresh Tomato and Mozzarella Salad

Funnel Chanterelle Soup

Ingredients

  • 2-3 large, ripe tomatoes
  • small block fresh mozzarella
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup fresh basil

Instructions

Cut tomatoes and mozzarella in slices and arrange the slices on plates, alternating between tomato and cheese slices. Prepare olive oil/balsamic vinegar reduction by placing both in a small pan and boil slowly until it has been reduced to about 1/3 or 1/4 of the amount you started with.  Drizzle over tomatoes and cheese.  Flavor with freshly ground salt and pepper and garnish with fresh basil.
