Ocaissionally, we just need some good ol’ fried chicken. I am a big fan of KFC (go ahead, laugh). Well, this recipe is similar, but a little better for you. It isn’t like any fried chicken I grew up eating (except KFC).
It works best if you can cook the chicken in a deep frier. If you use a skillet, you can use less oil; it’s just more of a pain.

Ingredients
- 2 – 3 lbs chicken breasts
- 2 quarts olive oil
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp thyme
- 1/2 tsp basil
- 1/2 tsp oregano
- 1 tbsp celery salt
- 1 tbsp black pepper
- 1 tbsp dry mustard
- 4 tbsp paprika
- 2 tsp garlic salt
- 1 tsp ground ginger
Preparation
- Preheat olive oil to 400 F
- Defrost chicken
- Cut chicken into strips of desired size
Instructions
Combine flour and all spices in a 1 gallon freezer bag and mix well. Add chicken and shake, coating evenly and thoroughly, taking care to ensure all strips are separated. Place coated chicken in frier basket. Deep fry for 12 – 15 mins.
