Spanish Rice

This is a good compliment to our Enchilada recipe.

Ingredients

  • 1 Cup uncooked rice
  • 1 medium onion
  • 2 Tablespoons Olive Oil
  • 2 1/2 Cups Chicken Broth
  • 1 8 oz Can Tomato Sauce
  • 1 1/2 teaspoons Salt
  • 3/4 teaspoon Chili Powder
  • 1/8 teaspoon Garlic Powder

Preparation

  • Dice onion

Instructions

Sautee rice and onion in oil over medium heat until rice is golden brown and onion is tender, about 3 – 5 minutes.  Stir in remaining ingredients.  Bring to a boil and reduce heat to medium-low.  Cover and simmer until rice is tender, about 30 minutes, stirring occasionally.
